These are a perfect addition to any dinner, Superbowl bash, or gathering of friends and family.
Ingredients for Chicken:
12 pieces skin-on, bone-in Chicken ( thighs and legs work best)
salt
pepper
a little oil
Ingredients for the Sauce:
1/2 onion, diced
4 smashed garlic cloves
2 T oil
2 T butter
1/4 C tomato paste
1/3 C True Kinship Corn Whiskey
1 Cup ketchup
1 small can Chipotle peppers in Adobo sauce (2 peppers, 3 T adobo sauce)
3 T Worcestershire
2 T balsamic
1/2 C honey
3 T molasses
1 tsp soy sauce
1/2 cup water
cracked pepper
Directions for Chicken:
Pre-heat your grill to high. Rub a very small bit of oil all over your chicken pieces then sprinkle with kosher salt and cracked pepper on all sides. Place your chicken on the grill (skin side down) for 5 – 10 minutes to sear them well (be careful not to burn your chicken!) Once seared, flip chicken over turn the heat down to medium or move to a cooler place on the grill. Cover and let cook for 20 – 25 minutes. Turn them over and baste other side with the BBQ sauce, covering for another 20 – 30 minutes or until the juices run clear (around 170 F.) Turn the heat back up to high to give the skin side another sear to crisp it up. Rest before serving.
Directions for Sauce:
In a medium pot, saute the diced onion and garlic in oil and button on medium high heat until soft. Add the tomato paste and stir constantly for 2 minutes. Add the True Kinship Young Whiskey and simmer for one minute. Add the ketchup, chipotles and adobo sauce, Worcestershire, balsamic, molasses, soy sauce, honey, cracked pepper and water, then simmer on low for 10 minutes. Use an immersion or regular blender to blend all ingredients. Return to your pot, cover, and keep on a low heat until you’re ready to use.
